Sweet Potato & Chickpea Curry

Nutrition during pregnancy and during the post-partum period is so essential. The health and wellness of you and your baby is so important during this time. Making sure you are eating a healthy, holistic and balanced diet should be your daily goal. Staying nourished in the post-partum period can be challenging as you juggle a newborn and your recovery, so making time to cook for yourself or your family can take a backseat. This beautiful and nourishing Your Mindful Mama curry is the perfect meal during pregnancy, straight after birth, during the fourth trimester and post-partum. It's also a meal to start introducing to your baby when they start solids. Our families love this recipe and it's a solid winner in both our households. Enjoy, mamas!

Sweet Potato & Chickpea Curry 

 

INGREDIENTS LIST

  • 1 tablespoon of fresh grated ginger 
  • 2 tablespoons of olive oil
  • 2 cloves of fresh crushed garlic 
  • 1 Bay leaf  
  • 1 brown onion diced  
  • 1 teaspoon of turmeric 
  • 2 teaspoons of curry powder  
  •  3 cups of vegetable broth or stock 
  • 1 x 400gram can or coconut cream 
  • 1 x tin of lentils drained  
  • 1 x tin of chickpeas drained  
  • 1 x red capsicum diced 
  • 1 x large, sweet potato (approx 3 cups) cubed 
  • 3 cups of Baby spinach 
  • Parsley to serve 

 

METHOD

In a large fry pan cook the olive oil, garlic, ginger and onion until nicely sauteed and translucent. Add the turmeric, curry powder, chickpeas and lentils. Cook for 2 minutes until fragrant. Add in the sweet potato, capsicum, bay leaf, vegetable broth/stock and half of the coconut cream. Simmer on a low to medium heat until sweet potato is cooked through. Add more broth/stock or water if need be. Add remainder of the coconut cream and spinach. Cook for a further 10 minutes and serve with rice or quinoa. Top with parsley.  

This dish is also lovely with a squeeze of lime, some toasted cashew nuts and a homemade coconut yoghurt riata. Add some fresh chilli for a kick! Modify where needed to suit the tastes of your children and baby.
